Mustard-Stuffed Chicken

Ingredients
- 125g ball mozzarella
- 50g strong cheddar
- 1 tbsp wholegrain mustard
- 4 skinless boneless chicken breast fillets
Equipment
- 1 × oven
- 1 × medium bowl
- 1 × baking sheet
Steps
- Heat oven to 200ºC / fan 180ºC / gas 6.
- Tear 125g ball mozzarella, torn into small pieces.
- Grate 50g strong cheddar.
- Mix the cheeses and 1 tbsp wholegrain mustard together in a medium bowl.
- In the side of 4 skinless boneless chicken breast fillets, cut a slit then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together.
- Season, place on a baking sheet and roast for 20-25 mins.
- Serve with greens.
