Mustard-Stuffed Chicken

Ingredients

  • 125g ball mozzarella
  • 50g strong cheddar
  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets

Equipment

  • 1 × oven
  • 1 × medium bowl
  • 1 × baking sheet

Steps

  1. Heat oven to 200ºC / fan 180ºC / gas 6.
  2. Tear 125g ball mozzarella, torn into small pieces.
  3. Grate 50g strong cheddar.
  4. Mix the cheeses and 1 tbsp wholegrain mustard together in a medium bowl.
  5. In the side of 4 skinless boneless chicken breast fillets, cut a slit then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together.
  6. Season, place on a baking sheet and roast for 20-25 mins.
  7. Serve with greens.
